How to make homemade bacon easily

Bacon is pork jerky made from pork belly. Drying meat requires a lot of salt which is usually mixed with other ingredients to give the bacon more flavor. Before curing your pork belly, the meat is usually smoked to give it a distinctive, stronger flavor. Drying and smoking meat are similar processes, regardless of the ingredients you use for both. After practicing with a basic recipe, you can easily get more creative by adding the ingredients of your choice to achieve different flavors of bacon.


  • 2.2 kg pork belly with skin

  • 1/4 cup coarse salt

  • 2 teaspoons of pink salt for salting

  • 1/4 packet of brown sugar

  • 1/4 cup of honey (preferably with chestnuts)

  • 2 tablespoons chilli flakes

  • 2 tablespoons sweet paprika

  • 1 teaspoon cumin seeds

  • Liquid smoke (if you don’t have a smoker)


Dry the bacon

    Buy pork belly. This can be the most complicated part of making your homemade bacon, as most supermarkets don’t carry it. Go to your nearest butcher or a chain supplying restaurants  .

    Meat quality will often be better from a butcher than from a restaurant supplier. The latter will also generally sell the meat in quantities too large for your needs  .

    Rinse your meat well. Rinse your pork belly to remove blood or any other parasites. Let the meat dry then transfer it to an 8 L resealable plastic bag .

    • After rinsing and drying your meat, its surface will be slightly sticky .
    • You can also cut off the ends of your pork belly if necessary. You should get an approximately rectangular piece to place in the plastic bag .

    Prepare your spice marinade. To do this, mix the coarse salt, pink salt, brown sugar, honey, chilli flakes, paprika and cumin in a bowl . Mix until the spices are well integrated into the honey. This recipe is just one of many examples you can follow to flavor your bacon. You can prepare other marinades like…

    • 1 to 1.5 kg skinless pork belly, ¼ cup coarse salt, 2 teaspoons pink salt, ½ cup sugar, 1 teaspoon maple syrup, 1 tablespoon Bourbon , 1 teaspoon freshly ground pepper, and hickory smoke for smoking meat (which you can get with hickory chunks or liquid smoke for roasting bacon in your oven  ).
    • 1 kg pork belly with skin on, 2 1/2 tbsp coarse salt, 1 1/2 tbsp sugar, 1 tbsp black pepper, 1 tsp fennel seeds, 1 tbsp teaspoon caraway seeds, 1 teaspoon dried rosemary, 1 teaspoon dried thyme, 2 bay leaves, 1 clove garlic, finely minced .
    • 500g pork belly, 1 1/2 tsp coarse salt, ½ tsp pink salt, 2 tbsp hoisin sauce, 2 tbsp honey, 1 tbsp soy sauce, 1 1 tbsp ginger powder, 1 tbsp garlic powder, 1 tsp Sriracha sauce or other hot sauce, ¼ tsp 5-spice blend and 2 tbsp water  .

    Cover the pork belly. You have enough marinade to evenly coat your meat . Cover your meat with your spice mixture in the plastic bag so that it is evenly coated.

    Place your meat in the fridge for 7-10 days. Reseal the plastic bag and place it in the fridge. Turn the bag once a day so that the meat is well coated with the marinade and wait 7–10 days   .

    • The duration depends on the thickness of your meat. A thin pork belly (about 3 cm) will take 7 days to marinate while a thicker piece (5–6 cm) will take 10 days .
    • Test the dryness of your meat by touching it when you think it’s almost ready. The jerky will be firmer, like a steak you just cooked. If the meat is still too tender, you need to marinate it longer .

    Rinse the meat well. After drying it, you can take the meat out of the bag and rinse it thoroughly. Discard any spice bits and other ingredients that remain on the meat. Dry it after rinsing it well  .

    Put it back in the fridge for 2 days. After rinsing your meat, place it in the fridge uncovered for 48 hours  .
