History and characteristics of bacon

The term “bacon” (pronounced “ba-con”, in French) was originally a French word for salted pork . Adopted by the English, the term returned to France in the 19th century, but this time pronounced in English!

Across the Channel, bacon refers to charcuterie made from pork lard, a thick layer located under the animal’s skin. It is salted and smoked breast cut into thin slices that are fried to accompany eggs for breakfast. In France, on the contrary, the term “bacon” refers to defatted, deboned, salted and smoked pork tenderloin , which is also consumed in the form of extra thin slices.

Unlike English bacon, French bacon contains almost no fat. Along with white ham , it is one of the leanest cold cuts. A dietary ally all found!

Another advantage is that it is an excellent supplier of good quality proteins , which maintain muscle mass and provide a certain satiety (which prevents untimely snacking during the day!).

How to choose bacon?

Preferably opt for bacon from pigs raised without antibiotics and fed without GMOs, and favor products with reduced salt and nitrite content. Do not hesitate to scrutinize the labels and nutritional information. Some products combine additives!

How to store bacon?

Bacon can be stored for 3 to 4 days in the coldest part of the refrigerator, between 0 and 4°C.

How to cook bacon?

He’s the breakfast star, but it would be a shame to confine him to this one job. Bacon cuts a fine figure on its own, in sandwiches , wraps, or burgers. Cut into strips, it enhances mixed salads, and replaces bacon bits in a quiche , carbonara pasta or tartiflette.

Bacon is also the essential ingredient of the Orloff roast veal, interspersed with slices of cheddar or Emmental cheese.

You can also fry it quickly in the pan or put it in the oven for a few minutes to make it a little crispy. Be careful, avoid overcooking which brings out the salt and makes it rubbery.
